I don't know if someone answered this on Twitter, or if the info will be helpful now, but the last day of class is usually the final. It's not the same time as the usual class period, but schools try to make it as close as possible. Students come in with their number 2 pencils, scantrons, and blue books, and take the exam. When they're done, they leave. The professor might have past assignments/tests/essays graded that she'll pass out before the exam, but that's pretty rare. Sometimes the final exam is a presentation or portfolio. Presentations will be done in the classes leading up to the final and in the final exam period. Portfolios are turned in at the last day of lecture or at the professor's office before the end of term.
If you're talking about the last day of class, as in the last class before the final, it's usually either a review, the last lecture, or some sort of oral presentation done by the students. If classes don't have a final, or the final isn't comprehensive (i.e. just another big exam), it's typically the one of the last two.
Final grades are posted online at a later date. Some professors will have the grades up to that point done, and will make time for the students to look at theirs either during class or office hours.
